What's Cookin?

Thanks man! I gave away all my cast iron since we don’t camp anymore but otherwise I think we can manage that. 👊

i'm sure any pan would work, cast is nice for the holding the heat.. but man you gave iron away?!?!?! something tells me you must have an electric stove...

We have gas and electric actually.

They got to heavy for my wife and she doesn’t like me cooking anymore. Always hovering and getting in the way. It’s like how I get when she’s in my workroom. So now I leave the cooking to her unless she’s not home or she asks me to make something.

This is the one that would have my heart doctor doing flips and giving me hifives...just basic oatmeal for daily lunch but I adult it up with cinnamon pistachios, home freeze dried apple chunks, raisins, and apple pie seasoning. Makes my home smell awesome and it's like taking a belt sander to my cholesterol 😋

give my recipe a try man... it's very easy and comes out like the cake type you like!!! you probably want to add a little sugar, i'm diabetic so none for me..

1.5 cup cornmeal
1/2 cup flour
1 teaspoon salt
i Tablespoon baking powder
1/2 teaspoon baking soda
1 egg
1 cup milk
1/2 cup buttermilk ( i don't buy buttermilk, i just use 1.5 cups of milk and add a squirt of lemon juice in the mix, same as buttermilk)
3/4 stick of melted butter
1/2 cup of whole corn

put a cast iron pan in the oven to get hot then mix all the ingredients together in a bowl and pour the batter into the hot pan and set it in the oven. takes about 20 minutes or so...
Now that I got a few chores off my list I was sharing your cornbread/corn muffin recipe with her. I thought we might try this one together. We think we have everything on the list as well.

However the last ingredient is 1/2 cup whole corn. Neither of us has had it that way, I don’t like raisins in things either. Is it okay to drop that or do we need to substitute?

My grandmother kept everything in her head so we lost a lot of family favourites. Especially at Christmas time.

most people do not use corn in it.... it's my thing man, i had it in a cornbread once and thought it was so much better so i put it in mine.

if you're not into that consistency then skip it!!!!! and something i didn't mention, it's very forgiving so i just eyeball the amounts of most of it.
and save a tiny bit of melted butter to coat the inside if the hot pan before you pour in the batter... just a thin coating to keep it from sticking is all.

and you might wanna add a 1/4 cup sugar to the mix...

Nice! Can you do chopped almonds or walnuts? Love oatmeal, I crave porridge in winter. I do use a shameful amount of brown sugar but I add nuts and chopped fruit often. With a bit of milk.

My wife looks online for a recipe once in a while. A lot have either corn or creamed corn added, you’re not alone.

I’ll let you know how it goes. We’ll probably pour it into muffin tins this go.

Most of the time I use these chipotle pecans I find at Costco. Not sure if you'll have them up there but these are so good and they bring just the right amount of spicy heat with nutty sweet

But last trip they had the cinnamon pistachios so I got those.
Chopped nuts would be good but I like them to be dusted either with a spice like sriracha or cinnamon. Cayenne is good to mix in too if you like spicy heat with the sweet & savory

Doctors are the leading cause of death. Your brain, and the protective coating on your nerves are cholesterol and vital hormones are made of it. Even high "bad" cholesterol patients had better outcomes than those fighting to lower it with drugs or diet. Recently, it was proven that sugar is the enemy, not fat. The cholesterol correlation has been proven a fraud.

Every time I make curry I ask myself why I don't make it more often.
I've found a mango curry I really like with baked cod but I bet it would be good with shrimp and of course chicken and veggies;H

plus it makes the whole house smell great when cooking it!!!!!!! i had the left overs for lunch the next day, added some heat to it the second time around!!! hehe

Wifey made garlic noodles with olive oil and shrimp.
