Stars must be in alignment for my first weekend off since March 1st...
picked up my scripts today then took a walk thru the store and found these.
Cap steaks are hard enough to find and usually come in packs of four which were about $90avg. A 3 pack at price I can live with had me happy dancing.
Now I need to source some lobster or crab to go with one and the other two will get frozen for later.
On the one, gonna sous vide with green chili then sear at 700 on my grill

And this guy. Man those fucks at Costco are evil making desserts like this. Peach season just seems to come earlier and earlier every year and there's no way this dude wasn't coming home with me

Costco is dangerous. The bakery & dessert section is responsible for a few pounds on my frame!

When my wife texts me the shopping list she always writes at the end DONT GO TO THE BAKERY DEPT! because I always come home with something truly diabolical.
Luckily this big boy can be frozen! I'm gonna get it firm in the freezer then use my pizza slicer to slice it all up and freeze the slices.
 
i picked these two up yesterday.. never tried it before. i really liked the Sticky Fingers brand though and will buy those again for sure!

i tried the tejas one on a piece of chicken.. it was really good, but i bet i liked the sticky fingers better. still waiting for the kinder's to go on sale again, still wanna try them out.

thats cool, i didn't even know they were a restaurant.. their sauce just popped up in our local store this week. less than half the amount of sugar some of the other brands have too.
They popped up here about a year or 2 ago, I keep saying im gonna go but the prices steer me elsewhere.
Its suuuuper cheap for bbq, concerns on quality arise real fast when bbq is cheap af lol
The 3 meat sampler plate is only 20 bucks, like what dark ass back ally did yall pick up that "brisket" from that it can be slapped on a platter and not break 20 bucks....

what wasn't cheap was the one brisket they had in my local store.. really $132 for choice cut!!!! nope!!!

Last one I bought was 4.49 a lb and only 70 bucks, for a black angus brisket...

I always giggle at the Texas stuff you guys find and post. The world sure has a funny idea about things down here.
Zen posted something a while back that had me rolling. It was labeled Texas flavor but if it was here, we'd probably call it Polynesian or something.

Sauce in Texas can be good but here's the thing...Good BBQ usually has a terrible sauce. Bad BBQ will have a great sauce. And nobody really does the thick dark and sweet sauce. That's like a Kansas City thing.
Good BBQ will be the spots with an old timer pit master, the spot is just the person's last name, maybe partial brick and mortar store with dining area under a carport on picnic tables.
Chain restaurant BBQ will be in the strip malls and those spots have the good sauces.
Then the "new school" very trendy and hyped up BBQ will be in modern space like the Mission spot G$ posted or the one Zen posted in another thread. Around here, those spots are for the Tesla cowboys who love to spend $200 on a BBQ lunch I can make at home for $20

Texas BBQ sauce is more like an Au Jus and used like an Au Jus to dip a BBQ sammy in it. I don't think many put it on the meat. We use it more for dipping.
The flavor is vinegary BBQ sauce with heat increased by how much cayenne is added. Usually very peppery and you'll taste garlic and vinegar. It's not sweet or thick. I've never seen it in stores and usually comes in a recycled liquor or clear wine bottle.
Pretty ez to make and you can reduce the brown sugar and still get the great flavor! I like to reduce the sugar but increase garlic and worsteshire for a more bold flavor I like in the combo of ingredients


Stubbs BBQ is another that makes me giggle when Y'all post it. Man, if Y'all only knew. Once upon time , in the 1930's, yes there was a legendary man in Lubbock, Christopher(Stubbs) Stubblefield but what was bought out and moved to Austin isn't anything like that and pretty far removed from it.
The legend is in Lubbock at a spot that no longer exists. Stubbs today is a tourist trap small concert venue that caters to hipsters and does have some of the worst bbq in town but the tourists who eat there don't know any better and still think Stubbs is back there on the pit even though he'd be like 150 years old or something. Dude fought in Korea so maybe not that old but he's been gone for a bit now.
I'll put it like this too....Do Y'all know about "Bless your heart" in the South? Like if somebody in the south tells you bless your heart after you have just told them or shown them something, it's not a compliment. So when people buy Stubbs, I know this is so bad, but my first thought when I see those bottles is Bless your heart :ROFLMAO:

I hauled these in yesterday too. Kinder rubs can be hit or miss for me but these two are actually good.
Cien Chiles makes some really good sauces. Found the habanero yesterday and it's weird because it's mild so all the flavor of habanero with very little heat. The jalapeno they have is hotter

I'll never understand the Minecraft architecture used for new bbq joints. They're here too and I usually see Teslas in the parking lot. BBQ snobs who can't possibly wait in a line and inside reminds them of a Chipotle burrito line. Those people are worse than hipsters and I thought hipsters were bad.
I like a good bbq spot to look like this. If there's a line at 6am on saturday morning you know you're in the right town

ehh even a porta potty would have a waiting line if it was only open one day a week!! hahahahaha i'm just jokin!!

the bbq around here just sucks plain and simple. every once in a while some chain place will pop up and be gone within a year. last one we had was dickies, i didn't even finish my meal there, i went home and cooked my own food it was so bad!!

this is not a joke but sadness, until the late 90's BBQ here was considered ground beef with a tomato style sauce on a small roll, just like a sloppy joe. this is what people say and refer to as BBQ here. not kidding!!! some places it's still call it that and some people don't even know what a smoker is!! it's on menus at about every pizza shop and diner around!

bbq sauces will always be a revolving door for me. IMO, really good bbq doesn't need any sauce. i've eaten brisket from a handful of places in texas and never even tried their sauce at all!!
trust me, when you go from ground burger in slop to good smoked brisket within one airplane ride you don't want to cover it up in some pungent sauce either!!

there are quite a few "firsts" i will always remember in life and good BBQ is one of those times!!! the red barn in sugarland tx.

i can't remember who gave me this recipe but this has been my go to sauce for pork for years now. easy to make.

APPLE BARBECUE SAUCE:
1 onion, peeled and chopped
1 chipotle pepper, in adobo sauce, chopped
1 clove garlic, minced
1 cup apple sauce
1 cup ketchup
1/2 cup honey
1/4 cup molasses
1/4 cup soy sauce
1 tablespoon Worcestershire sauce
Juice of 1 lemon
Salt and freshly ground black pepper

i'm not joking man.. pretty much about every picnic or party will have a crockpot full of it with a bag of rolls right next to it!!!!! fuckin places will even cater it at events!!!!! and people scarf it down like its donuts!!!!

weddings, funerals.. it don't matter there will always seem to be a crock pot of bbq on the side!!! hahaha sad... so sad!!! you guys need to ask @Costanza , he lives kinda near me i bet he can back this one up..

I never knew BBQ until I got to Texas.
All over the country BBQ has a different meaning. Some think deep fried chicken becomes BBQ once you dip it in bbq sauce or pizza becomes bbq pizza when you use bbq sauce. That mess you speak of is Army bbq too lol.
I kinda wish people would come up with a NY style or Chicago style bbq. Transplanting Texas or Kansas City into other regions hits sometimes but is usually a miss. Like Alabama coming up with white bbq sauce or the Carolinas going with mustard rubs and pork butts creating regional styles of bbq.
I enjoy Texas style but also love Mexican style bbq stew dishes so I try to come up with my own and have the green chile brisket. It's texas style but with a zesty zing zang kick instead of a salty black pepper kick. I smoke it with mesquite instead of post oak and it gets devoured even by my wife who tries to be vegan haha. It's caused an argument ot two for the last piece at work. I feel like northern regions could take Texas style but use local hardwood and spice and make it into something as good if not better.

In California we always called it bbq but we were actually grilling.
When my family came to visit once they drove out here and while they drove, I slow smoked a brisket so when they got here it was ready. They had no clue I had spent 18 hours on that fucker and thought it had just come off the "grill"
I sent them home with a packer in a cooler to do at home to impress friends but they totally ignored me and grilled it.
I get an email complaining it took too long to cook on the grill which was only about a half hour and they're used to shit being done in 10 minutes then when it was done it was tough as leather. I wanted to smack 'em thru internet man.

For the most part, I'm anti sauce unless it's for leftovers or chicken or salmon.
Grilled chicken bathed in sauce is a craving I get several times every Summer. Just sloppy and messy eat it with your hands getting it all over your face bbq chicken with a pile of potato salad on the side. If you didn't use a whole roll of paper towels to clean up or just stay outside and hose off, it wasn't saucy enough

this is one of the reasons I had plans to buy a food truck the bbq here is terrible. If I can make ribs and brisket in my yard better than a place that specializes in BBQ then there's something wrong hahaha
My style is more of a memphis style, I like this guys recipes
