What's Cookin?

only in texas would you see cutting board like that!!! looks like a quick lunch, you could set a stop watch if ya sent that down in front of me!!!!

picked up all the fixins for lo mein and also jambalaya!!! was aiming for gumbo but couldn't find okra.. pickins were a little thin in produce. i think i just got there at the wrong time, the place was packed with people!!! got the andouille though and the shrimp looked extra nice!!!

it's gonna get real cold again here so this will make a great stick to your bones kinda meal!!!

I was planning a party tray already but as I was shopping I browsed all the fancy boards the store had for sale wanting one but not willing to spend what they were asking. They were very expensive with the lowest price being $30 for something that looked like a wood cafeteria tray.
Then off to the side they had the Texas boards marked on clearance from $25 down to $4.20. Yeah there was no way I was leaving a 4.20 Texas board behind so I took it as a sign and brought it home. Best of all the wife loves it and wants to hang it in the kitchen now.
The engravings on it make it look all kinds of fancy artsy.

i remember one of the hotels i stayed at near TI houston had stepping stones in the state shape!!!! hooters in austin has a really nice texas shaped table when you first walk in if you've ever seen it!!

This looks so good. Every time I try to make something like this I can never find the right ingredients in this area. The andouille sausage is always the one ingredient I can never find unless I drive an hour or order it online

i get the sausage from Giant, i think you have one near ya.. they only carry the johnsonville brand and it's in the small hotdog/bacon section, not the meat section.

i like to add okra but i couldn't find it, frozen is mostly the only way i can really find it..

one of the few states i've never been to... i feel i'm really missing out too. never had real creole or a po boy... only my own and mistakes made by others. thats one of the only reasons i learn how to cook something sometimes.... when i've had the real deal somewhere and then later down the road i try it local or something and just get a big miss.. i can't have the last time i eat a dish be a sucky one so it forces me to learn how to do it right! the best meals we now eat are all home cooked, it wasn't always this way though!!

Most of Weezyanna is swamp and forest but NOLA is one helluva town to visit.
I hate it for those folks down there to get kicked in the nuts again last week. They've been thru enough as-is but always come out stronger on the other side.
The battlefield of the war of 1812 vs Britain is a great visit along with the Quarter and walking along the Mississippi. Tons of US history in that area.

The food in New Orleans is probably the best I've ever had. Everything from fancy and hi-end to dive joints, it's all good.
Breakfast...beignettes and strong NOLA style coffee with chickory
Lunch...Oyster or shrimp poboy. Like cheesesteaks, it's the bread that make them special
Dinner...something fishy like red drum, blackened, and topped with lump crab or maybe a stuffed pork chop with jambalaya or a cup of gumbo on the side. They stuff everything down there from French toast to every meat possible they'll stuff it with something. You can't go wrong stuffed.
Like we've gone down there for football games but make no mistake, food was the priority.

My fave NOLA chef is Kevin Belton. He has a show on PBS you might get up your way but if not he has cookbooks and DVDs. Might be on youtube too IDK. His recipes are legit with his own creations and some passed down thru generations of his family. If you want authentic at home, his recipes are a great place to start

Giant is the only place I can find that kind of stuff it’s not too far I’m about a 20 min drive from the newest one. When I make Indian food I always have to go there because they carry fenugreek leaves

I went to Mardi gras in 2000, we are at some place called lucky chengs Asian creole and about halfway through the dinner I realized all the wattresses were all dudes in drag 😆 the food was excellent

Its only 10° up here, says the real feel is -9°f, like what TF!!!!

brr!!! that real feel is a bunch of BS though... never had it 20 years ago... if it's 10 its 10.. if it feels colder than that then you're wrong you don't really know what ten feels like. haha

if real feel and wind chill were a real thing then show me a device that can measure them.... just BS algorithms IMO.

doesn't really matter what i say though, it's still fuckin cold out!! haha
 
Cold snap hitting here too at a mere 40 degrees so I made a Mama Slappin' beef stew with a Wagyu chuck roast rubbed down with Slap Ya Mama seasoning and other fixins then watched the dinner scene from Hateful 8 while eating it

I had a grilled cheddar cheese sandwich and baked beans just a few days ago. Bacon in the sandwich and beans. 👍

Oatmeal, soups, stews any of the comfort foods that sticks to your belly is great for cold winter morning or nights.
