What's Cookin?

My wife asks my son and I to look things up or search for her. I’m trying to tell her she can get the AI to do most of it. When she asked me to find a Louisiana style dry rub this is what we got. Tasted great on wings last night.

## 🍗 Louisiana-Style Dry Rub for Air Fryer Wings

This dry rub captures the bold and spicy flavors typical of Louisiana cuisine, perfect for enhancing your air-fried wings. Here’s a simple recipe to create that delicious seasoning.

### Ingredients

  • 30 g paprika (preferably smoked)
  • 15 g garlic powder
  • 15 g onion powder
  • 10 g cayenne pepper (adjust to taste)
  • 10 g dried oregano
  • 10 g dried thyme
  • 5 g black pepper
  • 5 g salt
  • 5 g sugar (optional, for a hint of sweetness)

### Instructions

1. Mix the Ingredients: In a bowl, combine all the ingredients thoroughly until well mixed.
2. Store or Use: You can use the rub immediately or store it in an airtight container for future use. It should last for several months if kept in a cool, dry place.
3. Apply to Wings: Pat your chicken wings dry with paper towels. Generously coat the wings with the dry rub, ensuring they are evenly covered.
4. Air Fry: Preheat your air fryer to 200°C. Place the wings in a single layer in the air fryer basket. Cook for about 25-30 minutes, flipping halfway through, until they are crispy and cooked through.

### Tips

  • Adjust the cayenne pepper to control the heat level according to your preference.
  • For an extra kick, consider adding a pinch of crushed red pepper flakes.
  • Serve with a side of ranch or blue cheese dressing for dipping.

Enjoy your flavorful Louisiana-style wings!

Leave it to the Americans to bastardize an already good thing, lol. Looks really good. I think I needed the photo. I might have been a hard sell, if you were just giving me a description. Now I want to try it. Did you develop the recipe?

i saw it on you tube, but i think it's from one of the chain restaurants.. just shredded chicken, spinach, onion, corn, black beans, nd a little cheese to hold it all together. roll it in an eggroll wrapper and in the air fryer for about eight minutes. tasted way better than i thought it would.

I believe ya. I sure looks like it tastes good. I thought I was seeing some okra. Must have been the spinach.

We’ve been hitting the real bakery this summer. Real bread and not the crap they call French or Italian loaf at the grocery store. Grilled cheese and peanut butter sandwiches are soooo much better.

I love using phrases from that movie and "cornbread" is one of them!
Can't Get Right is the perfect name for all these wonky mutant strains but I also use cornbread for road games against tuff opponents.
Like the OSU game is a cornbread game...."Gonna go to Columbus and take the Buckeye's cornbread next Saturday morning"
Not many know what I'm referring to when I say it but some do...I know you would hahaha!
Last season I kept telling people we were going to A&M and taking their cornbread. Don't give a fuck about 120K Aggies in the stadium wanting revenge after 12 years all mad and shit. Don't matter, we're taking their cornbread. And yep, we damn sure took their cornbread that night!!
Few players got it and laughed but they're also into old comedy too. Nothing too much better than an 18 year old in 2025 quoting the movie Friday, 30 years before his time. Though I did take issue with one kid thinking Deez Nuts has only been around since 2012. Nah Grommet. Been around way longer than that! Dr. Dre brought it around in '92 and it may have been used before that by Dolemite. That was a pandoras box though because now the kid is quoting Dolemite?

Found my wife napping in the bedroom this afternoon. Laying down beside her I had hoped to bug her. I must have fallen to sleep right away. 😳

I woke two hours later to find she ditched me. 😤

But it was for a great reason…

I’ve found a lot of things I didn’t like are okay now. Mostly things that were too strong. My theory is as we get older our senses fade and we need the extra strong spices and flavour just to get a good taste. Where as kids are hit with it hard.

LMAO! Yeah I wasn't sure but had a feeling.
I think it was your post about not liking corn ribs or not thinking too much of them. I didn't want to convince you otherwise but thought maybe his mind might change if it was seasoned with Elote? Because that's the stuff that made my corn ribs damn near addictive!

It's wheelhouse is on corn and especially corn cooked over fire. It's meant to replicate a flavor of Mexican street corn where it's a bowl of grilled corn dressed with cotjia cheese, lime, and spice.
I like the parm in there because it's not as salty as cotija. The more salt I cut from my diet the more I taste it in everything so for me Mexican cheese may as well be a salt block.
Lime is usually a hint of flavor for us and never dominating unless it's a drink. So something like lime pepper is really like a subtle hint of lime and a blast of hot pepper but we shorten it for brevity sake.
I'll also use that Elote on fruit like melons and peaches and veggies cooked any and all ways but my goodness that stuff on grilled corn will probably make that version of corn your favorite.
