no, i've never heard of that one!!! not sure i could even try a cherry pickle.. i'll file that one along with green beer.. nope.. somebody once told me ketchup is great on tuna, not trying that one either!! haha
I haven’t used ketchup since I was 8-10. I don’t remember what happened but I just stopped it cold turkey.

Tuna I like and had just the other day, but ketchup, even if I still liked it, just sounds wrong. I think it would look gross too. 🤮

Only thing I use ketchup for is to load it it up with hot sauce or black pepper and dip fries in it. There's usually better condiments to choose. Toom or Lebanese garlic dip and chile crisps have been my go-tos lately.
I don't dislike ketchup but don't like it either.
If ketchup is part of a dip, like for shrimp, loaded with hot sauce and other seasonings I can eat it. It’s no longer ketchup then.

i only use ketchup on one thing.. omelets. for some reason i gotta have it!! it's the only thing i use it on, a bottle lasts for years!!! haha

I got the idea from a boss I had in Newark NY. We dice olives, bacon, maybe sausage, peppers, stuff like that and roll it all in. The best part is the olive oil after it’s had things added and sat a while. Beats butter hands down.

If we actually had a bread maker I would be able to leave the house, stuck in the door frame. 🤣

man those bread machines are such cheaters, you can taste the cheat too!!!! i ain't joking, a hand kneaded bread with love has so much more flavor in it. especially when ya make it the machine on the rapid setting like i do. bread should not be made in under 2 hours but it does it somehow.. my chickens get most of it.

Came home late last night after a full day of playoff baseball to find my wife had made a taco bar.
2am, I went to town! Al pastor, vegan, gringo, and a few others not shown. Mixed and matched 3 different 'tillas, 2 proteins, 5 choices of sauce, and all the fixins'!
I only got one pic though

i prefer the flour ones over corn but still get a craving now and then.. maybe five flour to every one corn..

Just depends for me..Crispy corn and fatty skillet corn for tacos... fried white or yellow corn for dipping tacos... red ancho and flour for fajitas and bfast tacos.... white flour for enchiladas & bfast tacos... green chile for burritos... wheat for bfast or avocado vegan. We go nuts with tortillas haha!
The only ones I stay away from are the corn & flour blend, butter, and gluten free. First two are just way too fatty and are artery cloggers. The gluten free looks like a pita bread and if I want pita bread I just get pita bread.

The crazy thing for me is I could have tacos every night and each night would be different tacos.
Nothing wrong with gringo or taco bell style at all unless it's actually Taco Bell lol. For real though man that style is very popular among Mexicans too and pretty much everybody really. That's the center of the universe when it comes to taco Tuesday!! The big thing though is just going home made and adulting it up and not that weird oatmeal beef mixture Taco Bell uses.
There's a difference between the national brands of crispy shells and what we get though. Like Old El Paso tastes like chemicals to me but the brand made in San Antonio is really good and it's like generic or some shit, cheaper than everything but no preservatives so they can go stale super fast.

That's the newer tortilliaria at the stores and they're kept warm in that rack.

The ones on the table are piping hot. They sell pretty fast when they're hot and any that don't sell right away go in that warming bin and kept warm all day if they last that long but are usually sold out by 3pm. But this is an old pic so now they use that vertical rack.
Yep I bring a small insulated pizza bag to keep them separate from cold food. I like them to be a little undercooked then finish them on my skillet and they'll taste like they were made minutes earlier. Great to buy and freeze too. Like during hatch chile season they'll have a special run so I buy those and freeze them for later.
They do sell cold tortillas but those are in the bread aisle and have all the preservatives making them taste bad

Nice write up and he’s right about the location. He’ll have no problems putting out large outdoor grills and having all day fires. It’s an old industrial area transitioning slowly. But he’ll be in a huge lunch crowd area for certain. Even the fire station is only a few blocks away.

There's some to unpack but from here, everything look on point and I'd call that authentic Texas BBQ.
This looks like true BBQ and was cooked at around 275-300. This is good. We tend to go lower and smoke the meat at 225-250 for half the cook time then raise temps to 300 for finishing.
BBQ is fine and smoked is fine. Smoked will add more smoke flavor of course and you'll see it in a red ring between the bark and meat.

This is also the common 3 meat platter with some caveat to it.
3 meat is brisket, sausage, and either turkey or pork rib.
That looks like a beef rib up top and that would be unusual first because it's small and second because it's in the 3 meat package.
A Texas beef rib is a plate rib. We call them Dino Ribs because they look like the rib that tips over Fred Flinstones car. They're huge and usually sold by itself. It would cover everything on that plate.
I can see the small beef ribs being used due to availability. That right there is Texas AF, working with what you have and making it special and to me, nothing wrong with that at all.

The rub looks on point...black pepper and salt. People go wild about the rubs but man, the best BBQ that gets the awards only uses those two ingredients. Maybe some garlic powder too but rubs have gotten so silly lately.
Condiments are on point too and a plus 1 for using cornbread and not white bread loaf. If the pickled red onions are home made you're in for a treat.

Interesting about the beef cheeks. That's something that was actually perfected at a food truck no more than 500 yards from my home.
This is a dish where Texas and Mexican bbq styles meet and the result is pure awesomeness. It may be too rich and decadent for many IDK. If you've had Wagyu or Kobe beef, it's a similar experience. That would be what I would order because that's more than food...it's an experience.

I'm not a sausage guy anymore and consider it a filler much like sides. The star of the show is brisket and beef plate ribs.
Beef cheeks, barbacoa, al pastor may be harder to find but are also held in very high regards.

The value on the 3 meat platter is around $40/lb here so that's the bottom line pricing and depending on lots of factors, can be up around $250 if not careful. But expect $40/lb to be average for us. Sides can be good but not more than $6 no matter what it is.
I would expect those platters shown to be at around the $60-$80 price points in Texas at the quality spots.

Only the woman second from the right liked the ice cream. Three liked the lemonade but said it needed spirits. Whiskey, which I found strange, and vodka was suggested.

My wife is into dill pickles but passed on either of these. 🤣

I saw pickle ice cream at the store but it was actually sherbert and it was pickle and chamoy sherbert. I was somewhat interested but kept browsing and saw German Chocolate Cake ice cream. I grabbed it and didn't ask questions or look back. NO way I'm picking pickles and chamoy when GCC is at the party!

At most BBQ spots here you'll see something like this in the back or some sort of offset rig on a trailer to be towed.
The fire is in the square box and the meat is in the tanks...

I think you'll be in for a treat. I get the sense who's doing that has studied up on Aaron Franklin and Leroy & Lewis. IMO, if you're gonna try to emulate somebody's bbq from down here you can't go wrong with those two BBQ joints for inspiration.

We decided to try a new Indian Cuisine that moved in a while ago. The restaurant was very nice with reasonable prices and excellent service. You even get 10% discount for eating in!

The next night we had rice we got with roti a couple days ago and leftover Andhra Chicken Curry with a bit of Mutton Masala near the fork we had out the night before.

My wife found it a bit too hot but my son and I really enjoyed it. She chose a hot dish. We got two meals out of it for less that $70. The Naan bread we tore through and didn’t make it to day two.
 
It's the ranch dressing flavor that did it for me. That's just straight up domestic terrorism in a bottle

i'm just not a fan of any type of seltzer of fizzy drinks so i don't think i would enjoy any of those..

can't remember the last time i thought, hmmm wish i had some black olive flavor soda to wash down this pizza with!! 🤣 🤣

I used to love a really cold coke or Dr Pepper. But I haven’t really bought a pop/soda in decades that didn’t come with a meal.

Two weekends back the grocery store was handing out free coupons to get a new brand of pop. They would scan the coupon at check out and hand you one of three flavours. I almost gasped when I saw the price! $3.48 for a pop!!! What happened to $1 each or $3.99 for a case? Wife just shook her head and said times have changed. A six pack of beer hopped up to $25 from $21 just a month ago too. Not liking this new normal.

here too.. i'll buy it once in a while on a decent sale and my secret is i never put it in the fridge. if i leave it out warm i only drink one now and again when i remember to chill one off. i end up having a can maybe once a month. my family doesn't really drink it at all so it makes it easier for me to stay away.

plus i kinda keep it stashed out of view... out of sight, out of mind!!!

Haha we're the same way but with Coca Cola and my wife with Diet Dr.P. A 6 pack of 16oz bottles will last us a couple months.
It's more of an elixir for me and I love coke and ice with pizza.
We buy the bottles too because one bottle will last a few day after opening and I only drink maybe 6-8oz at a time.
I love the loud, subsonic, foundation rattling belch it will make me do. It's loud and crazy but feels so good! Like releasing a demon that's been in me.
I tell my wife and dogs that's a kiss for Y'all and laugh.

I try to do smoothie lunches but end up breaking down and needing to eat a little more after.

Been making a mango,papaya, and pineapple blend from Costco and kicking it up with heat and it's really good. Tastes like a beach vacation to me and the spice is just enough to know it there while the sweet and cold frozen tames it.

The black raspberry BB is good but could do well without the chocolate and just be straight blackberry ice cream.
So I'll yield to Kit Kat cones over the new BB flavor for now :ROFLMAO:

Today was so hot it was a double tank slushie day.
I did a lot of work on the back yard today ripping up old decking and concrete. Also got into a dang nest of yellowjackets taking 3 bites to each arm and hands and another 3 on my back.
So the second batch of slushie is pickle berry with THC and a knock off benadryl chaser. Also ate a few gummies and rolled a fatty. Swelling and pain is minimal now. Tomorrow, I rain death and wholesale retribution without mercy on that wasp nest

We got lucky last year. The hornets never bothered us even flying into us on occasion they would bounce off and keep going. They even seemed to help pollinate, which I didn’t think they did.

With the nest so integrated into the hedge I couldn’t remove it cleanly so I left it until winter.

This year I’m watching out for any nests starting up. Spray it early before it gets football size.

If you can wait until night you’ll have less to deal with but they will still attack once you start. Good luck, cover your head/face if you can. 🍀👊

BB also came out with a new Tin Roof Sundae this Summer but their cherry vanilla is still #1.
I've dabbled in some dairy free options to avoid the cholesterol and some have been really good and surprising. If it's a nutty ice cream, it works great. Kinda like oat milk tasting better in cereal for me than cow milk but it's use range is limited to just that.

I think the nest has splintered into 3 nests. The original that's on the floor of my carport and two new ones they're trying to build.
I like to do my big Home Depot orders online so I just go pick it up and don't have to walk around the store so along with my lumber order I added in a two pack of the wasp and hornet spray with a 15' spray stream.
I'm going in double barrel and spraying that mutha down like I'm Al Capone or some shit. They'll soon realize I'm not in the carport with them. They're gonna be locked in there with me and only one is coming out. Gonna show them what apex predator is all about.

I knew there would be some pain in some form though. I avoided getting on the roof and climbing the tree with one hand and a chainsaw in the other but danger was lurking around another corner.

We got lucky last year. The hornets never bothered us even flying into us on occasion they would bounce off and keep going. They even seemed to help pollinate, which I didn’t think they did.

With the nest so integrated into the hedge I couldn’t remove it cleanly so I left it until winter.

This year I’m watching out for any nests starting up. Spray it early before it gets football size.

If you can wait until night you’ll have less to deal with but they will still attack once you start. Good luck, cover your head/face if you can. 🍀👊

I didn't realize I was under attack until I got the first bite on the back.
The nest was attached to a miter box hanging near the rafters of the carport. It was behind and inside the box so I couldn't see it. I picked up the miter box and walked away with it so I was also walking away with a hornet nest in my hand not knowing it.
When I turned around to see what bit me I was face to face with a swarm but luckily it was in the carport where they stayed and I escaped with only maybe 10 bites and just 4 were painful and swole up, got hot and all that but the others felt fine after a few hours.
A few chased me but my orange oil spray was right there so I turned it on and ran thru a cloud of orange mist which they didn't follow.
I saw they were trying to do something with the miter box nest on the ground and also build new nests in the rafters already. the one on the ground is only the size of a peach and the two new ones are maybe half the size of golf balls already.
That's how they get me though. Last time a nest was hidden up in a ladder and I grabbed the ladder and started walking then seconds later I'm swarmed.
IDK if they're very beneficial but I have seen the yellowjackets snatch the caterpillars that get on buds and eat them. It's pretty gruesome too because the yellow jacket takes the head off the caterpillar and sucks it's innards out. They seem to be meat eaters and don't suck pollen
