Dinner was roasted chicken, stuffing, mashed potatoes, corn with garden beans and gravy.

I posted a bit prematurely. I almost didn't share, because it isn't pretty...

Patty pans are my favorite squash. I had mentioned to my wife that I wanted to try some new stuffed squash recipes. Last Wednesday, she surprised me with a recipe she tried using turkey sausage. Of course, I had to work late that day. So, she kept it covered. It was right up my alley for taste, but appearance had suffered due to sitting around and sweating while it was waiting on me to get home. Good stuff - no pun intended.

I had a cheat day sandwich for dinner last night too.
I meant to take a pic but I was half way into it before I remembered....
Have you ever heard of a pambazo?
If not....Pambazos are a Mexican style sammy with a mix of potato and sausage or beef filling along with cotija cheese, lettuce, tomato, and onion. The bread is a torta and dipped in guajillo sauce then seared.
It's so good and only a few TexMex places around here have them so I got one from my fave spot in the north part of town last night.

Wife made this tonight.

I made this for her. Chocolate bark with milk chocolate, ground and chunky almonds, little marshmallows and chopped Carmels. This is just before I freeze it.
