i've learned that if i put enough hot sauce on it, i'll eat just about anything!!! haha

i miss the long potatoes though... gotta keep up my diet, its actually working. i don't know how because i'm still eating a lot of food!! i was 228 on my last doctor visit and today i'm 192 so i can't argue with results, so still no bread, no rice, no fries, potatoes, no pizza... at least i still get beans!!!!! hahaha

Couple weeks ago I picked up this bulk pack of black beans and sticky rice.
Gonna make zesty black bean burgers from scratch and with the rice try my hand at making sushi.
Also wanna get into some vegan enchilada recipes.

Yeah hot sauce is good all the time any time but with that meal it was kinda in the way. I used tallow on that beyond steak and the veggie pancakes. That tallow impacts so much flavor it's almost a crime to use any dipping sauces.

I found a hack on pizza using whole wheat thin crusts. Making them veggie keeps them in my diet guidelines.
One thing I was missing was sour cream so instead of using it I use plain nonfat Greek yogurt. Tastes like sour cream to me but without most of the bad stuff

Another home run I found but not sure if it's ok for your diet. Maybe the best cereal I've found doing this heart healthy thing. They're like eating a big bowl of vitamins....

The one on the right is really good too and they both can go on anything. I've even seen the blanco used to rim glass for beer and margaritas. Truly all purpose!
If you like corn on the cob and can find the Elote seasoning, might be the best corn you've ever tried.

Do you still have your gravity fed lump burner?
When I was shopping my pellet I found a gravity masterbuilt on clearance sale for like 90% off. It was a crazy sale but the next day I went back and somebody bought it.

The price I saw on that gravity fed made me wonder if they lasted or if there was an issue or something. I've never seen a BBQ that was once like $600 be selling for less than $100 on sale. Just crazy. It was at Home Depot.
Yesterday I saw a 98" TV for less than $1000 so who knows. Maybe it costs a ton to keep big ass inventory out so after a while they just want it gone for any price. That 98" was so big I'm not even sure it would fit in a pick up bed.

Today I own 4 outdoor cooking rigs. A Santa Maria for over fire and rotisserie, a cowboy style fire pit with a spit, a pellet grill that can do it all plus I have a steel flat top to turn it into a griddle, and a big ass pizza oven.
I use the pellet more than anything. It's a RecTeq Bullseye and I have nothing but good things to say about RecTeq.
Wish I woulda waited on the pizza oven. Mine is huge and weighs like 500lb. A year after I bought all the Ooni and other small pizza oven came out at like only a 1/3rd of what I paid for my behemoth. It is baddass though. Every dish comes out rustic and delicious with that wood fired oven flavor.

It's soft & stays soft, toasts well and it's fantastic with just butter & I bet it's great w/ chicken salad too

Next I'm going to try a Caraway Rye which is very close to this, also Dark Rye is another favorite, it's also similar

i miss rice.. specially with beans... been on a kick lately with black beans, corn, onions, peppers, tomatoes, and chopped chicken breast. heavily seasoned and i add a little bit of cheese at the end. my woman is not into it so i've been making it while she's been eating a lasagna and chicken parm the neighbor made us.

a few years ago somebody gave me a vegan patty mix, i'm not exactly sure what was all in it, mostly bean i believe, might have even had some tofu mixed in and i would have never known it.. it was damn good though, already mixed and seasoned perfect.

we like sushi a lot.. well sashimi for me.. no rice right now!! haha

the very first night i was in japan we ate at an awesome sushi house, this guys hooked us up!!! been chasing sushi that good ever since, haven't had it yet!

oh yeah the yogurt is something we almost always have on hand too.. subs in for so many dishes, plus it just gives it an "adult" flavor to the food. kinda like the tallow, i can't eat eggs cooked in anything else ever again. it makes them taste so much more rich, kinda like the plain greek yogurt does. add a little greek yogurt to your scrambled eggs in the tallow with a little bit of that salt free signature spice blend and fuckin forgetaboutit!!!! i'm tellin ya man, eggs on a whole different level!!

Another home run I found but not sure if it's ok for your diet. Maybe the best cereal I've found doing this heart healthy thing. They're like eating a big bowl of vitamins....

i saw that in the store, didn't get any yet... so far the best i saw for carbs were the multigrain cheerios, which i like but honestly if i'm gonna have a cheat it's not gonna be with cereal.. it would be with the neighbors homemade lasagna and chicken parm!!!! hehehe (this may have or have not happened i can't remember!!! ) hahahahaha plus if there's no dietary numbers written on the package when you get it then that means theres nothing bad in it!!!! hehe
 
I can't get over the texture of sushi so I don't eat it.
It's good, but makes me gag 🤢

some of the things i've eaten in asia i don't even have a clue as to what it was.. fish and mustard was on special at pizza hut in wuxi china one month!!! hahaha the worst is when you bite into something and it pops and gushes something gross... eeeewwww so nasty!!!!hahaha i can laugh now!! honestly though the only thing that i ever spit out was a drink.. sprite and tequila, i sprayed the whole bar down like in the movies!!! hahaha

Yeah tip culture in the USA is something alright. Ever tell you about the time a server asked how much I was going to tip as she was seating us?

Sushi is a warm weather treat for us. Poke bowls too along with peel and eat shrimp or shrimp cocktails and even ceviche which I love but my wife's not too fond of.
Our sushi sitchyation around here is different. We have rolls you've probably never heard of or imagined and honestly would be laughed at in Japan. We have Ahi and all that but also some stuff with local infusion in the roll.
Before you ask, yes I've seen brisket sushi and we even have Cajun rolls. There's a roll named after every major Texas city and even a Philly, California, and Caribbean.
I'm in a mood for sushi so I'll make a run later. I have a feeling the pics will blow your mind. Well maybe not the pic but what we have and how we get our sushi is next level and insanely affordable.

Some of what's offered is like the Temu of food and is a knock off really.
Like the ceviche isn't real ceviche. It's boiled shrimp mixed with pico de gallo with extra lime juice added. Nice replica, but they're not "cooking" that shrimp in the lime juice.
And a strawberry sando is a knock off. Berries are the same but we do it with Texas Toast with the crust cut off instead of milkbread, and we use whipped cream from a can. You know what you're getting so really the only crime is they charge $8 for that sandwich that has less than a dollar worth of fixins. I'm not sure why people buy those.

I want to make sushi more for the ability to say I can. Just never done it and seems fun.
I wanna make cevice with red snapper and those enchiladas will be portabello, spinach, and a green sauce.
4 days until vacation and I'm planning to get down on the home cooking stuff I don't ever get to do!

That yogurt is something else! Got tuned in on it doing that lava chicken or tandoori chicken, using that yogurt in the marinade.
Then as I was looking over recipes I was wondering why is this yogurt ok but everything else is bad and realized then how it has all the flavor but the bad is stripped out of it. I'll take it!

Made tacos last night...chicken & rice, black bean and feta + fixins on crispy shells. Yeah I know those aint homemade 'tillas but I just love those crispy fuckers! Not really a taco but more like handheld nachos using those shells.

Underestimated the heat in a new sriracha I got. Rooster got too mild for me so I switched up to the Dragon.

If you're interested, the new source for sriracha is Underwood Ranch. This used to be where Huy Fong got their peppers but all the legal drama and fighting ended up being ruled in the ranch's favor. Huy Fong hasn't been the same since and it's inconsistency had me shop around.
The ranch started to produce it's own line of hot sauces and now, that bright red blazing heat is back baby! No more knock off and wannabee and no more WTFs when tasting the rooster anymore.
 
Pan seared filet migon, finishing it off in the oven to medium/rar


This shit is so good , one of the best I've made.

Let it sit for 12 hours after Seasoning, seared it now gonna let it heat up a little more in oven

Very tender, cuts like butter.

most of asia doesn't tip.. china takes it over the top with it, not only do they not tip but when you fill up your grocery cart at the store and everything has a price on the shelf they totally ignore that price!! they fill up their cart, empty it all out on the belt, let the cashier ring it all up, put it in bags, and then they proceed to argue and haggle until both sides give, they then yell at each other go on their way... and everybody in the freakin store does this!!! taxis too, see the price right on the meter.. nope, they'll argue for 30 minutes to save a penny!!!! no joke!!

the only gripe i have with japan is most restaurants don't have seats or chairs. 95% of the places yo sit on the floor to eat. it's uncomfortable and difficult to get up fat and happy from the floor!!! EVERYTHING else in japan i loved!! i got some stories from that trip for sure!!! we had the rental car for about five weeks, we told them four but kept it for five, when i brought that thing back i thought they were gonna hold a parade for me.. here they lost all my info and paperwork and thought they would never see there car again!!! hahaha i come rolling up and all the employees come running out bowing to me and cheering i'm like wtf?!?!? hahaha we all laughed for a while on that one.

i like to take the store bought crunchies then put a homemade hot tilla on the outside, sometimes with a thin layer of The Wiz in between!! keeps em from all falling apart in my hand because i stuffed it too much... i always overstuff the tacos!!!! hahaha

I've been stuck in a loop making only the breads in the machine's recipe book

Happened to see a bread machine cookbook on Amazon marked down to $4 and change, it's got hundreds of different kinds of breads in it and I feel like I've been turned loose! 😋🍞

Even fruitcakes and nut breads for Christmas, can't wait!
 
Fresh made ceviche!

Ingredients all mixed together and fish & shrimp put down in a single layer in a non reactive dish.
Cover with plastic wrap and refrigerate.

After 1-2 hours, stir. After 3 hours, check to see if it's done and ready. Usually around the 3rd and 4th hour it's ready and cooked.
The cooking occurs from the acid & enzymes in the lime juice and doneness is all visual. Fish will be white and flaky while shrimp will look like they've been boiled and chilled.

Keeps well for about 2-3 days in the fridge.
Serve with tostada shells or tortilla chips or eat straight up like a shrimp cocktail.

If it's not spicy enough, hot sauce from a grenade will kick it up a notch 😋
